The food sanitation industry faces a significant challenge in maintaining food sanitation, from farm to table. Millions of cases of foodborne illnesses and deaths occur every year due to unintentional contamination, improper food handling, and inadequate sanitation practices. It is crucial to detect, identify, and document the contamination of food products as well as monitor the level of sanitation consistently at each stage of the food supply chain (FSC). Integrating FSC with cutting-edge technologies including Blockchain (BC) and Artificial intelligence (AI), can significantly enhance the ability to detect food contamination and monitor sanitation practices. The Contamination and Sanitization Inspection-Device (CSI-D) is a new AI-based handheld device allows for accurate and efficient detection of contamination, reducing the risk of foodborne illnesses and enhancing overall food safety. This study explores the potential integration of BC technology with CSI device in FSC, aiming to establish an efficient decentralized method for maintaining sanitation records, while improving the overall safety and traceability of food products in the FSC.
