The influence of Diacetyl tartaric acid ester of monoglycerides (DATEM) on the properties of oil-in-water emulsions prepared by whey powder (WP) and maltodextrin (MD) was studied. Data contains droplets size, zeta potential, surface tension, viscosity, morphology and FT-IR analysis of emulsions.
