Designing Measurement System of Pork Moisture Content Based on Bio-impedance

Based on the principles of bio-impedance detection, a measure system of multi-electrode pork moisture was designed. Impedance characteristics of different pork water content was studied using four needle electrodes and 220 kHz sine wave AC current source as the excitation signal. The results showed that a pork bioelectrical impedance decreased as the increase of moisture content.
