The synthesis of metionine chelated Manganese(II)and it's catalyzing effect on lipid oxidation
Feng Zhang, Xiaoming Zhang · Science and Technology of Food Industry · 2008
The methionine chelated Manganese(II) was synthesized with Manganese chloride and methionine. The optimum synthesis conditions was found as follows:molar ratio of ligand 2∶1,reaction time 90min,reaction temperature 80℃,and the yield of product was 89.91%.The constituent of the chelate was established as Mn(Met)2 based on IR spectroscopy and element analysis. It's effect on the POV of lipid was also studied, the results suggested that the chelates could hardly catalase the oxidation of lipid because of high purity and stability.
