Law for the Changes of Texture Properties in Different Mass Fractions of Almond Gels

In order to reasonably and efficiently develop and utilize almond gels,the law for the changes of texture properties in different mass fractions of almond gels was studied by using TA-XT2i texture analyzer.The results show that the differences of most properties reach an extremely significant level in different mass fractions of almond gels;that these properties are hardness,fracturability,cohesiveness,adhesiveness,gumminess,chewiness and resilience,but springiness does not show a significant difference;and that the changes of parameters for the texture properties present a rich diversity.
