The Modeling of Interphase Exchanges

The exchange of mass between phases, if it exists, results in an exchange of momentum and energy. This chapter talks about the exchanges of momentum, energy and mass, with the last two coupled. It discusses the transposition of modeling for filtered average, thus enabling a large eddy simulation (LES) approach. The chapter demonstrates the method of calculating the mean interface area per unit of volume. The frictional contact force can be split for showing contribution due to pressure and due to viscous friction. The chapter also discusses heat transfers at the surface of a particle without mass exchange, heat and mass transfers during boiling, and mass and heat exchanges by vaporization.
